Industria che, lo ricordiamo, costituisce per limballaggio uno sbocco fondamentale in termini di volumi (65% della cifra daffari a livello mondiale). In particolare, in Francia, il settore dei prodotti alimentari solidi è il principale utilizzatore di imballaggi (38%), seguito dallimballaggio di bevande (27%). Il food rappresenta però anche uno dei motori dellevoluzione tecnologica, spingendo la ricerca a creare imballaggi intelligenti attivi, interattivi o funzionali, per risponde alle esigenze di un consumo in divenire, dove cresce la domanda di prodotti freschi, frutta, ortaggi e piatti pronti. Proprio questi nuovi imballaggi saranno al centro dei dibattiti della giornata. Si parlerà di imballaggi attivi (assorbitori di ossigeno e plastiche disidratanti) che devono essere capaci di selezionare, liberare progressivamente, assorbire o trasformare un composto o un gas. Ma anche di imballaggio interattivo, che agisce sullalimento e sul suo ambiente, per prolungare la durata di conservazione e migliorare la qualità, modificando per esempio lossidazione delle materie grasse, la degradazione delle vitamine eccetera... E poi ancora, al centro dellattenzione, limballaggio indicatore (che informa il consumatore sul tempo di conservazione e la qualità del prodotto). Infine, il preparatore che svolge, come indica il nome, un ruolo decisivo nella preparazione dellalimento per facilitarne il consumo: gli imballaggi auto-riscaldanti o al contrario auto-raffreddanti, ormai non più appannaggio dei pochi esploratori della terra e dello spazio. Ma lindustria si interroga anche sulla possibilità di migliorare la sicurezza del consumatore, fornendo da un lato informazioni esaustive tramite letichettatura, dallaltro garantendo il rispetto di alcuni principi fondamentali: quello della corretta composizione (solo le sostanze autorizzate possono entrare in contatto con gli alimenti) e quello dellinerzia (le migrazioni globali e specifiche non devono superare alcuni limiti). | | Food for thought Europack-Euromanut will host a day of conferences and encounters of a technical nature, entirely dedicated to the problems affecting the food industry. Industry that, we remind people, is a fundamental outlet for packaging in terms of volumes (65% of business figures the world over). In particular in France, the solid food sector is the main packaging user (38%) followed by beverage packaging (27%). Food though also represents one of the motors of technological evolution, thrusting research towards creating active, interactive or functional packaging, in order to respond to needs of consumption in the making, where the demand for fresh produce, fruit, vegetables and ready-to-eat dishes is growing. These very new packaging items will be at the centre of the debate of the day. On the agenda active packaging (oxygen absorbers and dehydrant plastics) that has to be capable of selecting and progressively feeding, absorbing or converting a compound or gas. But also interactive packaging, that acts on the foodstuff and on its environment in order to prolong the preservation and improve the quality, for example modifying the oxidisation of the fats, the degrading of the vitamins etc... And there again, at the centre of attention, the indicator packaging (that informs the consumer as to the length of preservation and the quality of the product). In the end, the preparator that as the name indicates, carries out a decisive role in the preparation of the foodstuff in order to facilitate its consumption: self-heating packaging or self-cooling packaging, now no longer only available to the few explorers of earth and space. But the industry also interrogates itself as to the possibility of improving consumer safety, on the one hand supplying exhaustive information on the label, on the other guaranteeing the respect of some fundamental principles: that of the correct composition (only authorized substances can come into contact with foodstuffs) and that of inertia (the global and specific migrations must not go beyond certain limits). | | | |
